Antioxidant Winter Salad

This is one of my favorite go to salads when I need to reset. It is packed with fruit antioxidants and beautifying ingredients. It also packs a great flavor punch and a contains a few key ingredients that will help keep you feeling fuller longer!

Fist off, EGGS. I cant express how important eggs are to maintaining a healthy body and helping you feel fuller and satisfied. The egg is a powerhouse of disease-fighting nutrients like lutein and zeaxanthin. These ingredients help reduce macular degeneration and are super amped brain foods! Second key ingredients is AVOCADO. Not only delicious but provide a good source of fat that is excellent for your hair, skin and brain focus and fuel. Avocados also contain almost twice as much potassium as bananas. ALMONDS are packed with fiber, protein, magnesium and lower blood sugar, they are also loaded with Vitamin E which is a great antioxidant for the skin, preventing cell damage.

The last but certainly not least ingredient I snuck in there that helps with feeling fuller are CHIA SEEDS. I love these things, and yes, they are the same seeds from the Cha Cha Chia commercials, little did we know those cute little Chia Pet plants would be the superfood of 2014- infinity!!! They are hydrophillic, meaning they draw in water and liquids to expand multiple times their size… so they trick your body into thinking you ate more than you did. Bonus: they are packed with fiber to stave off belly bloat and loaded with omegas, which are really good for anti aging and wrinkles! Plus, they barely taste like anything so they are super easy to sneak into soups, salads, smoothies etc

Top all these amazing ingredients off with the Skinny Fox Salad Dressing* and you are set.

Here’s all you need to make this beauty of a salad:

Leafy Greens ( Spinach, Arugula, Kale)

2 Hard Boiled Eggs (make sure they are free range, veg fed)

Handful of blueberries

1 tbs Chia Seeds

3 tbs Slivered Almonds

1/2 Avocado Sliced

Top all these amazing ingredients off with the Skinny Fox Salad Dressing* and you are set.

Although life has been pretty good lately, I do feel like I’ve been slipping. Slipping on my self respect, what I stand for, what I allow and my self care, that includes my physical and my mental wellbeing. Being a Mom and FT working lady is TOUGH AF. My biggest challenge is TIME! Managing my schedule so I can get all I need to get done AND take care of me.
I want to harness this moons power to guide me back to my core which is centered in LOVE, not chasing it, but BEING It. And that will only radiate into my work, my mothering and my self respect and care.
