Fresh caught Dorado ( mahi mahi ) served with lemon, capers and herbs

Fresh ingredients and good wine.

Theres nothing better than a fresh meal with clean ingredients, thats high in protein and happens to be chic AF. And an Al fresco seafood supper just screams Summer. This menu is literally a culmination of all of my favorite things.

–Local Dorado, caught the morning of, lightly floured then pan seared in butter with a lemon caper butter sauce.

–Lemon butter risotto

–Mixed greens salad and french vinaigrette

 
 

Ingredients for the Dorado

Fresh dorado (mahi mahi) fillets, without skin, cut extra thin

Milk

Flour

Salt

Pepper

Butter

Lemon

Capers

Instructions

Coat the fish fillets in milk, then cover in a flour/salt/pepper mixture.

On medium-high heat sauté the fillets in butter until crisp and light brown on the outside.

In a separate pan, melt butter (take care not to brown it), then add capers and fresh lemon juice. Pour over the fish and serve warm.
